Ingredients

  • One large new potato; no need to peel.
  • 2 TBSP of fine wholegrain flour.
  • 2 beaten free-range eggs.
  • 1 TBSP of grated onion to which we have added a few chive fronds for some greens.
  • Frozen slither of your favourite red pepper and some ginger.
  • A little squeeze of lime juice; or lemon.
  • 1/2 tsp fine salt.
  • A pinch of freshly-roasted cumin.
  • 2 TBSP cold-pressed avocado or olive oil for frying; if your cholesterol too is dangerously low you could like me, sneak in a lump of butter.

  1. First wash and then scrub the large new potato; let it dry.
  2. Shred the unpeeled potato and squeeze out the juice; save the liquid for soups and stews. Or put it into the dough for homemade bread.
  3. Grate the onion.
  4. Grate the frozen pepper and ginger very finely.
  5. Put the flour twice through the mill if you have one.
  6. Mix all the ingredients thoroughly together bar the lime juice; add a teaspoon of the oil.
  7. Heat the remaining oil in a heavy-bottomed pan.
  8. Drop large spoonful of the potato mixture into the hot oil; drizzle with a little lime juice.
  9. Fry for about five minutes on each side until golden brown.
  10. When cooked pile them up in the pan to drain off the excess oil, adding more of dough patties.
  11. Enjoy them hot or cold.

Nearly 50% of folk eating typical grocery store food have a serious problem with blood glucose. Traditionally cooked potato latkes are very fattening; enjoyed very occasionally that's probably fine.

Just to be sure though with a history of prediabetes, after starchy meals I always take a brisk walk or spin on the bike; particularly after supper. The liver turns that glucose from the carbs into glycogen instead.

Resistant starch
